This is a great dressing to go with veggies, meat or whatever you feel like. Avocado is such a wonderful fruit, and even guacamole gets old so it is nice to have other alternative dishes to use your avocado in. To make it AIP, leave out the mayo due to the eggs.
- 2 ripe avocados
- 1 serving (5.5 oz) of plain coconut yogurt - see recipe here.
- Juice of one or two lemons (to taste). Optionally use fermented lemon for added flavor and probiotic effect!
- 1/4 cup of mayo (make your own, or buy the Primal Mayo). Don't buy any commercial crap with canola oil in it!
- A bit of salt (to taste)
Add all ingredients to a food processor or blender and process until smooth.
