We have this one and the ingredients below are scaled after that. It makes 7 servings with 5.5 oz (2/3 of a cup) each.
Yes, making yogurt involves using sugar, but don't worry, the yogurt starter culture will eat the sugar to give you the right flavor. One comment about the starter culture: You can add more or less depending on how sour you want the end result to be. We generally use 1/4 tsp but if this makes it too sour for you, just reduce to e.g. 1/8 tsp.

Plain Yogurt
This recipe is one you can use as a base for other things. Or you can eat as is together with some berries or another good topping.
Ingredients:
3 cans (about the same as 5 cups / 1.2 liter) of full-fat coconut milk
3 tbsp of sugar
1/4 tsp of yogurt starter culture
2 tbsp of gelatin powder
Instructions:
1) Add coconut milk, sugar and gelatin powder to a cooking pot.
2) Heat at medium heat, constantly stirring, until it reach a temperature of 180 F / 82 C degrees. Use a cooking thermometer for this. Don't let it boil!
3) Let cool until it reach a temperature of 110 F / 43 C. You can also let it cool more and then reheat to the correct temperature.
4) Add the starter culture and stir until fully dissolved.
5) If you have a yogurt maker, add the mixture into that and follow the manufacturer's instructions. Otherwise, put in the oven at 110 F / 43 C degrees for 12 hours.
6) Once done, refrigerate - it will stay good for at least 5 days.
Lemon Vanilla Yogurt
Same method and ingredients as the plain version above - just add 1 tsp of vanilla and the juice of one lemon in step 1.
