Sweet potatoes is one of our favorite veggies. In this case I simply cut the sweet potato and a couple of carrots up in french fry sized sticks and drizzled with a bit of oil and some salt. Then, bake in the oven at 375 degrees for 25-30 minutes. As for the other side, we have plenty of broccoli and cauliflower in our garden at the moment and I harvested some right before cooking. I guarantee it, we have the best tasting broccoli in California now, right here in our back yard! If you have not tasted freshly harvested vegetables like this, I encourage you to try and grow some of your own food. The flavor is so much better when it is homegrown. These I simply steamed in some water with a bit of salt.
For the salmon, I usually get that from Costco since they have wild caught salmon at a reasonable price. I refuse to buy farmed fish, both for ethical reasons (they are raised in horrific conditions) and the nutritional value is poor (read more here and here). In this base I drizzled the salmon with a bit of oil, salt and some freshly picked dill from our garden. Bake for 20 minutes. Boom!
