Paleo Meal Cups

Turkey Meal Cup (fits 6 large muffin tins)

Ingredients:
12 eggs
1 1/4 cups cubed cooked turkey breast
6 slices of bacon
1 cup finely chopped Broccoli
1/2 cup sliced leeks

Instructions:
1. Whisk 6 of the eggs lightly together
2. Slice the bacon slices in half
3. Place the bacon pieces around the edges of the muffin tins
4. Place turkey on top of the bacon 
5. Add the Broccoli and Leeks
6. Pour over the egg mixture and shake gently to get it to mix with the meat and veggies
7. Finally, crack an egg on top of each.
8. Bake 30 minutes at 425F

Meatloaf Meal Cups (fits 12 large muffin tins)

Ingredients:
3 lb ground beef
1 tbs salt
2 tsp. rosemary
2 tsp. parsley
2 eggs
12 spices of bacon
1 cup finely chopped Broccoli
1/2 cup sliced leeks
3 cups tomato sauce (I used POMI brand but you can use homemade too)

Instructions:

1. Mix the meat spices and eggs
2. Cut the bacon in pieces and place them around the edges of the muffin tins
3. Place meat mix on top of the bacon
4. Divide the vegetables between the tins
5. Top of the tins with the tomato sauce
6. Bake 30 minutes at 425F
