This is a classic dessert in Denmark, but it can also be used for making a delicious starter or main course - just leave out the sweetener and fill them with a stew, or some meat and veggies.
Ingredients:
4 large eggs
1/2 cup avocado oil
2 tbsp. xylitol or a dropper of stevia
1/2 - 3/4 cup nut/hemp or coconut milk
1 cup cassava flour
1/2 tsp. salt
1 tsp. baking soda
1/2 lemon juice
1/2 tsp. vanilla bean
Instructions:
Mix everything in a blender. The dough has to be very runny so add more liquid if it looks thick. Heat up a non stick pan on medium heat. Add a little dough on the pan. Pick up the pan and move it around until the dough covers the pan in a thin layer. Turn when the edges start to brown (1-2 minutes).
Eat with jam, chocolate, sugar, ice cream or what ever you might prefer. Leave out the sugar and stuff them with stews and/or sauces.
