Ingredients:
1 large sweet potato
1/2 onion
1 tbsp. Rosemary (fresh if you have it)
1 tbsp. black truffle salt
2 tbsp. chives (regular or the flat kind that I used here)
Butter or oil for frying
Instructions:
1) Peel and cut up the onion and sweet potato into smaller bite size pieces. The onion has to be chopped up fine.
2) Place the potatoes in a microwave bowl and cover with water. Microwave until soft about 5 minutes depending on your microwave oven.
3) While that is cooking turn on a pan and start cooking the onions and Rosemary on low heat.
4) When he potatoes are done, drain the water off and add the potatoes to the pan. Sprinkle on the truffle salt and cook until the potatoes are nice and brown. Sprinkle the chives on top and you are ready to serve them.
